Roasty toasty sugar snap peas that bite.

Tonight, I was armed with a bag of sugar snap peas from the Bloomington Farmers Market (which I found surprisingly wonderful) and inspired by the following recipe from CleanGreenSimple.com: http://cleangreensimple.com/2011/05/sugar-snap-peas/.
I decided to improvise on a technique Chef Brenda Langton taught at her Healthy Living, Healthy Eating course a few years ago.  Anything I have tossed and roasted in a mixture of tamari and honey or maple syrup has yet to fail me.  

Roasty toasty sugar snap peas that bite

  • Wash pea pods and remove stems and tough strings.
  • On a sheet pan, toss with olive oil, tamari, cayenne pepper, freshly ground black pepper, and a couple drizzles of honey.
  • Bake at 450 degrees for approximately 9 minutes, tossing halfway through.  

Jeni’s caution: Don’t stick your face too close to the oven when opening the door to check on the peas.

    There were certainly a lot of people selling peas a week ago. There’s good honey and maple syrup as well.
